The Story
Kung Pao Chicken takes its name from Ding Baozhen (丁宝桢), a Qing Dynasty governor of Sichuan province whose official title was "Gongbao" (宫保 — palatial guardian). Legend holds that this was his favourite dish, prepared with the fiery local chilies and numbing peppercorns that define Sichuan cuisine.
The dish was temporarily banned in China during the Cultural Revolution as a "decadent remnant," only to be rehabilitated in the 1980s as one of the country's proudest culinary exports. Today it is one of the most ordered Chinese dishes worldwide — though most restaurant versions bear little resemblance to the vibrant, complex original.

Marinate the Chicken
Combine the chicken cubes with Shaoxing wine, light soy sauce, cornstarch, and sesame oil. Mix well until every piece is coated. Set aside to marinate for at least 10 minutes (up to 30 is ideal). The cornstarch is key — it forms the "velveting" coating that keeps the chicken silky.

Mix the Sauce
In a small bowl, whisk together light soy, dark soy, Shaoxing wine, rice vinegar, sugar, cornstarch, and water until the cornstarch dissolves completely. Taste and adjust — you want a balance of sweet, salty, and tangy. Set aside where you can reach it quickly.

Heat the Wok
Place a carbon steel or cast iron wok over the highest heat your stove can produce. Wait until the wok begins to smoke — this usually takes 2–3 minutes. Add 2 tablespoons of neutral oil and swirl to coat the sides. The oil should shimmer and almost smoke immediately.
🔥 Wok Hei Tip: Don't rush this step. A truly hot wok is the single biggest difference between restaurant-quality and home-kitchen results. -

Bloom the Spices
Add the dried chilies and Sichuan peppercorns to the hot oil. Toss for 20–30 seconds until the chilies darken and the oil turns fragrant and rust-coloured. Watch carefully — a few seconds too long and they will burn and turn bitter. You should smell a deep, toasty heat rising from the wok.

Sear the Chicken
Add the marinated chicken in a single layer. Leave it undisturbed for 60–90 seconds so it develops a golden sear on the bottom. Stir-fry vigorously for another 2–3 minutes until the chicken is cooked through and lightly caramelised on the outside. Push to the side of the wok.

Add Aromatics
Add the remaining tablespoon of oil to the cleared space in the wok. Add garlic, ginger, and spring onion whites. Stir-fry for 30 seconds until fragrant, then combine with the chicken.

Sauce & Finish
Give the sauce one final stir (the cornstarch settles), then pour it into the wok. Toss everything together rapidly for 30–60 seconds until the sauce thickens, turns glossy, and coats every piece. Add the peanuts and toss. Remove from heat, drizzle with sesame oil, and scatter the spring onion greens.

Serve Immediately
Kung Pao Chicken waits for no one. Serve immediately over steamed white rice. The peanuts should still be slightly crunchy, the chicken glossy, and the whole dish vibrating with the warmth of chili and the tingle of Sichuan pepper.
Cook's Notes
🌶️ Spice Level
Remove chili seeds for milder heat. For the authentic Sichuan experience, keep them in and double the Sichuan peppercorns.
🥜 Peanuts
Use dry-roasted, unsalted peanuts and add them right at the end to preserve their crunch. Cashews make a fantastic substitute.
🍶 Wine Substitute
Can't find Shaoxing wine? Dry sherry is the best substitute. In a pinch, use a splash of dry white wine.
♻️ Leftovers
Reheat in a hot wok with a splash of water to revive the sauce. Equally good stuffed into steamed bao buns the next day.
