The Story
Mapo Tofu was created in the 1860s by Chen Liu (陈刘氏), the wife of a tofu seller in Chengdu, Sichuan. Her face was pockmarked (mápó — 麻婆) from smallpox, and her modest bean curd stall near the city's North Gate became famous throughout the province. The dish that bears her unfortunate nickname has since become one of China's most globally recognised exports.
Authentic Mapo Tofu is defined by its "Seven Characters": 麻 (numbing), 辣 (spicy), 烫 (scorching hot), 鲜 (fresh/umami), 嫩 (tender), 香 (fragrant), and 酥 (crispy, referring to the pork). Every element has a purpose.

Prep the Tofu
Cut the tofu into 2cm cubes. Bring a pot of water to the boil, add a generous pinch of salt, and gently slide in the tofu. Blanch for 2 minutes, then carefully drain. This step removes excess moisture and firms the cubes so they hold their shape in the sauce.

Toast the Peppercorns
If using whole Sichuan peppercorns, toast them in a dry pan over medium heat for 1–2 minutes until fragrant. Grind coarsely in a mortar or spice grinder. Set aside — these are added at the very end and their potency is everything.

Fry the Pork
Heat 2 tablespoons of oil in your wok over high heat. Add the ground pork and stir-fry, breaking it up, until it browns and turns slightly crispy — about 3–4 minutes. You want some caramelisation here for flavour depth. Remove and set aside, leaving the fat in the wok.

Build the Base
Add the remaining oil to the wok. Add the doubanjiang and cook, stirring constantly, for 60–90 seconds until the oil turns deep red and the paste caramelises slightly. This step — called "frying the doubanjiang" — is the heart of the dish. Add the fermented black beans, garlic, and ginger, and fry for another 30 seconds.
🫙 Doubanjiang Tip: Pixian doubanjiang (郫县豆瓣酱) is the gold standard. If you can find it, the flavour is dramatically deeper than generic brands. -

Add Stock & Seasonings
Pour in the Shaoxing wine and let it sizzle for 10 seconds. Add the stock, light soy, dark soy, and sugar. Stir to combine. Return the pork to the wok. Bring to a gentle simmer.

Add the Tofu
Gently slide the blanched tofu into the simmering sauce. Do not stir vigorously — instead, use a wide spatula to carefully fold the tofu once or twice to coat it. Simmer over medium heat for 3–4 minutes so the tofu absorbs the sauce.

Thicken the Sauce
Stir the cornstarch slurry and drizzle it in gradually, in 3 additions, gently moving the tofu aside with your spatula. The sauce should thicken enough to coat a spoon — silky, not gloopy. If too thick, add a splash of stock.

Finish & Serve
Remove from heat. Scatter over the Sichuan peppercorn powder and toss gently. Drizzle with sesame oil and chili oil if using. Garnish with sliced spring onions. Serve immediately, with steamed jasmine rice to absorb the extraordinary sauce.
Cook's Notes
🌱 Vegetarian Version
Omit the pork and use vegetable stock. Add finely diced shiitake mushrooms in its place for umami depth.
🌡️ Serve Scorching
Mapo Tofu must be served blazing hot — the heat is part of the experience. Transfer to a pre-warmed bowl.
🫘 Tofu Grade
Soft tofu gives the traditional trembling texture. Firm tofu survives more robust stirring but loses that silky quality.
🧂 Doubanjiang Salt
Doubanjiang is very salty. Taste before adding extra soy sauce — you may not need it at all.
